This past weekend we got into the Halloween spirit and made these easy Halloween cupcakes. I just love these little candy eyes, I’ll be adding them to everything we eat this month. 😂
How To Make Spooky Spider Cupcakes
I decided to make a chocolate chip cupcake with white icing. As I mentioned, this is meant to be fairly easy so this is where you start – buy a yellow cake mix and a can of white icing. Yes homemade icing is much better, but I didn’t have 6 cups of powdered sugar on hand so I used store bought icing. For the cupcakes, I used Baking With Blondie’s recipe for Chocolate Chip Cupcakes from her cookbook, Cake Confidence. All of her recipes use a boxed cake mix to start.
Here’s what you’ll need for the Chocolate Chip Cupcakes:
- 3/4 cup buttermilk
- 2/3 cup sour cream
- 4 egg whites
- 1/3 cup vegetable oil
- 1 Tbsp. vanilla
- 1/2 cup mini chocolate c hips
- 1 Box white, vanilla, or yellow cake mix
Make sure you sift the cake mix, it helps to avoid pockets of dry ingredients forming in your batter. If you don’t have a sifter, no worries. The cupcakes will still be delicious! Preheat oven to 325 degrees, whisk together the wet ingredients, sift in the cake mix and stir. Bake for 15-17 minutes. Makes 24 cupcakes.

How to Make Your Easy Halloween Cupcakes Spooky
After your cupcakes have baked and cooled, ice them using a piping bag. For the Spiders you’ll need the following:
- one cup of chocolate chips
- 1 pack of Oreos
- candy eyeballs
I used half an Oreo for each cupcake, so I started by splitting them all. Place an Oreo on the center of each cupcake and press down slightly. Then, melt the chocolate chips in 35 second increments in the microwave, stirring in between. I simply put my melted chocolate into a sandwich sized ziplock bag and cut off a tiny bit to pipe on the legs. You could also use a piping tip I was just feeling lazy (and rushing).
Pipe 4 legs on each side of the Oreo, and then two dots on top to attach the candy eyes and you’re done! You now have a DIY halloween treat that’s fun for all ages. The kids could definitely help putting on the eyes but don’t be surprised if they turn out a little lopsided.
