I made these two ways: on Thomas’ Light English muffins, and on Dave’s Killer Bread everything bagels. I’m sharing both below, macros included.

So one weekend, my husband and I tackled these together, and it was so worth it. Now breakfast is handled: no thinking, no dishes (MY FAVORITE PART!), and it doesn’t have to be perfect to count.

If you’re new to meal prep (or you just don’t love it, like me), don’t try to make five meal prep recipes at once. That’s how you end up exhausted, with a fridge full of containers and zero desire to ever do it again.
Pick one recipe and only make that one. These breakfast sandwiches are a great place to start because it’s one sheet pan and one simple assembly line. Once that feels easy, add another recipe. My greek yogurt sprinkle mini muffins are a great next one, since the kids love them too. Small and consistent beats all-or-nothing every time.
Ingredients for 12 Breakfast Sandwiches
For the sheet pan eggs:
- 6 large eggs
- 2 cups liquid egg whites
- ½ cup Fairlife fat-free milk
- Salt and pepper

For each sandwich:
- 1 Thomas’ Light English muffin or 1 Dave’s Killer Bread Epic Everything bagel
- 1 MorningStar Farms breakfast sausage patty
- 20g Cooper Sharp American cheese (about one deli slice, I measured with my food scale for each sandwich for accuracy)
You can make all 12 on one kind of bread or split the batch and do some of each.

- Quarter sheet pan: the perfect size for 12 egg squares
- Unbleached parchment paper: for lining the pan and wrapping the sandwiches
- Glass mixing bowl

- Food Scale: This one is rechargeable and fits in my kitchen drawer.
- Freezer bags or a reusable freezer bag

How to Make Sheet Pan Eggs for Breakfast Sandwiches
Sheet pan eggs are the secret to breakfast sandwich meal prep. Instead of cooking 12 eggs one at a time, you bake the whole batch at once and cut it into squares.
- First, preheat your oven to 350°F and grease a quarter sheet pan, the small rimmed one that’s about 9×13 (or line it with parchment for easy cleanup). Tip: use binder clips to hold the parchment paper in place before pouring the eggs, just be sure to remove them before baking. Give the pan or parchment a light coat of cooking spray. Egg whites are low in fat, so they’ll stick without it.
- Next, whisk together the eggs, egg whites, milk, salt, and pepper.
- Then pour it into the pan and bake for about 20 to 25 minutes, until the center is set and doesn’t jiggle.
- Once it’s cooled for a few minutes, cut into 12 squares (3 across, 4 down).

Plus, the squares fit an English muffin or bagel perfectly, no egg rings needed.

How to Assemble Your Breakfast Sandwiches
Don’t bother cooking the MorningStar patties first. They’re already fully cooked, and they’ll heat through when you reheat the sandwich. Once the eggs are done, just build each sandwich: bread, egg square, sausage patty, cheese, top. That’s it.

If you’re freezing them, let everything cool completely before you wrap them. Otherwise, warm sandwiches trap steam and get soggy.
How to Freeze and Reheat Breakfast Sandwiches
To freeze: Wrap each sandwich in parchment paper and write what’s inside right on the parchment with a marker, so you can tell the bagels from the English muffins without unwrapping anything. Then store them all in a freezer bag or container. They’ll keep in the freezer for about 2 to 3 months.
I JUST realized I accidentally labeled them as biscuits when they are in fact muffins 😂.

To reheat from frozen: Unwrap the sandwich and open it into two halves so the egg is facing up and exposed instead of trapped under the bread. Cover loosely with a damp paper towel and microwave at 50% power (or on defrost) for 1½ to 2 minutes, then on full power for about 30 seconds, until the egg is hot in the middle. Close it back up and you’re good to go. Bagels may need a little extra time.
To reheat from the fridge: Move one to the fridge the night before and microwave for 45 to 60 seconds in the morning. If you have a few extra minutes, an air fryer at 350°F for about 5 minutes gives you a crispier outside.
Why open it up? The egg is the densest part of the sandwich, so it takes the longest to heat through. When it’s sandwiched under the bread, it’s insulated and heats even slower. Opening the sandwich lets the egg heat directly, and starting on lower power warms it evenly so you don’t end up with hot edges and a frozen center.

Which Breakfast Sandwich Should You Make?
Go with the English muffin if you want a lighter breakfast. At around 320 calories with 24g of protein, it’s an easy win, and the Thomas’ Light muffins have 8g of fiber.
Go with the bagel if you need something more filling, like on a workout day or a morning where lunch isn’t happening until 1:00. It hits 33g of protein and keeps me full way longer.
Honestly, I like to keep both in my freezer and grab whichever one my morning calls for. Sometimes I will cut the bagel sandwiches in half for my kids.
Easy Swaps
- Swap the sausage: Applegate or Jones turkey sausage both work great.
- Swap the cheese: Cabot light cheddar if you want to cut some fat.
- Add veggies: Stir a handful of chopped spinach or peppers into the eggs before baking.
